
Sourcing and crafting chocolate from Bean to Bar

The chocolate bar is the staple of the chocolate world. In fact, when people first think of chocolate I am pretty sure it would be a bar that would first come to mind. At Hill St., we have plenty of different types of bars to offer to our customers, all differing in strengths, flavours, and origins.
Back in 2022, we introduced our single origin, Bean to Bar, Nicaraguan dark and milk craft chocolate bars. However, the start of 2025 has seen some development on the Hill St. sourcing of wonderful beans. A lot of thought has gone into the recipe design and redesigning of the classic chocolate bar, and we are happy to announce that our shelves now feature a range of new bars all from different origins processed with love at Hill St.
At the center of our sourcing and selection of cocoa beans was our ethical considerations and traceability of the supply chain. We support sustainable cocoa trading with smallholder cocoa farmers worldwide. We are flavour-oriented craft chocolate makers. We believe in completely transparent, sustainable supply chains. Fairtrade for us is done through payment and engagement, always paying farmers a good price and being socially and environmentally engaged.

Hill St. Ecuador Hacienda Limon Bean to Bar 70%
Tasting notes: Smooth, creamy caramel sweetness with indulgent floral and nutty notes.
Hill St. Honduras Lago de Yojoa Bean to Bar 75%
Tasting notes: Beautifully intense chocolate combined with dried fruit and nutty notes.
Hill St. Uganda Semuliki Forest Bean to Bar 80%
Tasting notes: A unique blend of sweet citrus and cinnamon notes, complimented with indulgent chocolate fudge flavours.
Hill St. Tanzania Kokoa Kamili Bean to Bar 85%
Tasting notes: Chocolatey, creamy and full-bodied, balanced with fruity notes of apricot and mandarin.
Hill St. Madagascar Sambirano 100%
Tasting notes: Delicate, mellow, flavours and aromas of forest fruits.
